Kartoffel Pfannkuchen (German Potato Pancakes)

Ingredients

6 - 8 medium potatoes
¼ cup minced onion
2 Tbsp. flour
¼ tsp. pepper
¼ tsp. nutmeg
1½ tsp. salt
1½ Tbsp. parsley
2 beaten eggs
Bacon

Instructions

   Wash and peel potatoes, soak in cold water and drain. Grate at once and drain again. Add all other ingredients. Fry in butter until brown and crisp on both sides. Garnish with crispy fried bacon.
   Cook's note: This recipe may be used at any meal. Delicious!
