Easy Chicken and Dumplings - April 2007 Alabama Living magazine
Ingredients
1 rotisserie chicken (traditional or herbed) 2 (14.5 oz.) cans fat-free chicken broth 2 cups water 1 Tbsp. salt 1 cup fat-free half-and-half Dash of pepper Dumplings: Buy in freezer section of grocery, or cut flour tortillas into one-inch strips
Remove all meat from chicken, discard skin and bones. Pour broth, water, salt and chicken meat in a large soup pot and bring to a boil. Lower heat to medium and simmer for 10 minutes. Return broth to boil. Add dumplings to broth. Cook for 10 minutes. Add half-and-half and sprinkle with pepper. Serves 8 to 10.
