Cranberry-Orange Muffins

Cranberry-Orange Muffins - November 2006 Alabama Living magazine

 

Ingredients

1 egg
¾ cup milk
½ cup vegetable oil
2 cups self-rising flour
1/3 cup sugar
1 cup cranberries
1 Tbsp. orange peel
Instructions

   Heat oven to 400 degrees. Grease bottoms only of 12 medium muffin cups. Beat egg, stir in milk and oil, 1 cup cranberries and 1 Tbsp. orange peel. Stir in remaining ingredients all at once just until flour is moistened. Batter will be lumpy. Fill cups about ¾ full. Bake until golden brown, about 20 minutes. Yield: 1 dozen muffins.
