Veggie Cream Cheese Sandwiches - August 2006 Alabama Living magazine

 

Ingredients

From Pierce Chapel UMC Cookbook 2005, Opelika, Ala., pg. 16
1 Tbsp. lemon juice
1 package (8 oz.) cream cheese, softened
1 Tbsp. mayonnaise
½ cup carrots, shredded
¼ cup bell pepper, grated
½ cup cucumber, grated
¼ cup onion, finely chopped
Salt and pepper to taste
Instructions

   Combine first lemon juice, cream cheese and mayonnaise. Add in carrots, bell peppers, cucumber, onion, salt and pepper. Chill and serve on bread.
